The Mystery Dish

I can't say exactly how this turned out as I battled my sinuses this weekend so my tastebuds were way off. Here's what I did with ingredients I listed on Saturday.

The ingredients: Eggplant, spaghetti sauce, mozzarella cheese, ground turkey and canned mushrooms. I browned the ground turkey with some minced garlic. While it was cooking, I sliced the eggplant lengthwise. I then started layers in my Pampered Chef square baker. Each layer had eggplant, turkey.....

then spaghetti sauce and mushrooms................ topped off with cheese....
This is just out of the oven. I cooked at 350 for 30-45 minutes.
This picture came out a bit blurry. The family seemed to enjoy it though. Nicholas did comment that it was good and even stated that he usually doesn't like eggplant.
And Shirla, I think the new kisses taste just like pumpkin pie.

It looks good, Erin. Would you say its like eggplant parmesan, but with mozzarella cheese? I've never eaten eggplant parmesan so I dont know what it taste like.

Shirla,

I thought of it more like lasagna with the eggplant replacing the lasagna noodles.

Julieann,

I picked up my lovely eggplant at a farmer's market that was being held at the old Packard Proving Grounds.
